Question of the Day!!!

How do you ever cook for one person without having to eat leftovers for a week or eating out of a box. All suggestions are welcome. I just can't get the hang of it and right now I have enough ham and beans leftover to feed an army.

Freezer! Also, if you eat fresh, from the outside perimeter of the grocery store, you can control better the size of the meal. It is the same cooking for 2. I plan stuff that I can make something else from the leftovers, i.e. a roast and potatoes, becomes vegetable soup. Or a pork roast becomes pulled pork sandwiches. But in the end, the freeze becomes your best friend. Good luck!

I am a big fan of beans and weenies, crock pot chicken, and my new fav is taco soup. Those you can all do for a single serving. Good luck!

Maybe you have to eat more!!! Or I could send Eli up to stay the winter with you??? Just kidding, it is hard even to cook for two let alone one. Make lots of different soups I guess. The Taco soup sounds good to me. Love ya.

One other thought, since it is just you, buy less food and the perk is that you can now afford the best food cuz you're buying in much smaller quantities so be really good to yourself!
